Ingredients

300 g silken tofu 1 1/4 cup
1 1/4 cup berry mix, frozen 150 g
2 tsp vanilla extract 10 mL
2 tbsp honey 45 g
3 tbsp lemon juice, freshly squeezed 1 lemon
1 1/2 tbsp unsweetened coconut flakes [optional] 9 g

Before you start

A blender or food processor will be very useful to blend the tofu and berries.

For best results, use ONLY silken tofu.

Method

  1. Put the tofu in a blender. Mix at maximum speed about 1 min until a creamy consistency is obtained.
  2. Add the frozen berries, then mix. Add the vanilla extract, honey, and lemon juice. Mix well. Pour the mixture into individual bowls. Chill the mousse in the refrigerator for about 1 h before serving.
  3. Garnish each serving with coconut flakes and serve.

    PLEASE use the specified type of tofu, i.e. SILKEN TOFU, otherwise expect disappointing results. Silken tofu is very creamy to start with and blends well with the fruits. All other types of tofu will bring an unpleasing texture. Please do follow the instructions!!!

    The tofu flavour wasn't enough to cut the tartness of the berry mic for us. I might try it again using frozen fresh strawberries or blueberries and more sweetener, and I would probably put in some gelatin to set it better.

    Absolutely yummy. To previous reviewer I would say that I use silken tofu and serve this dessert right away.
